Pea Hummus On Toast

Ingredients
300g fresh or frozen peas
1/2 cup olive oil
¼ cup hemp seeds
Lemon juice and zest from one lemon
1 tbsp chopped mint
Pinch salt and pepper to season 

Enjoy this healthy twist on a classic dish and mix up your usual meals!

METHOD

If using fresh peas blanch in simmering hot water for three mins then place in iced water. If using frozen thaw thoroughly before use. Blend with all other ingredients, except oil, until smooth. Stream in the oil and season with salt and pepper.

Serve on toast with roasted tomatoes
